The recipe I have to offer is from the South Beach Cookbook. A friend at work made these the other day and were really really good! And only because she gave me the recipe yesterday do I have something to offer for TMTT!
Salmon Balls
2 cups canned salmon, drained, flaked and skin and bones removed
8 ounces reduced fat cream cheese, softened
1 Tbsp finely chopped onion
1 Tbsp lemon juice
1 tsp prepared horseradish
1/4 tsp salt
1/4 tsp liquid smoke
1/2 c chopped almonds
3 Tbsp chopped parsley
In a large bowl combine the salmon, cream cheese, onion, lemon juice, horseradish, salt and liquid smoke; mix thoroughly. Refrigerate for 4 hours or until firm enough to form into balls.
In a small bowl, combine the almonds and parsley. Scoop about 1 Tbsp of salmon mixture at a time and shape in to balls. Roll in the almond mixture. Refrigerate for 1 hour or until chilled.
Since this is a South Beach, Phase 1 recipe you're not suppose to eat crackers with it, but you totally could and it would be wonderful!!
